Ismael focuses on a high biodiversity at his farm. They use natural waste from processing as Cascara for fertilizing the soil and remaining moisture. They apply handwork and care of the plants to keep diseases and weeds away as much as possible

Anaerobic fermentation in stainless steel tanks for 144 hours
drying at the patio in direct sunlight for 3-4 days in a way that promotes additional fermentation´
the semi dried cherries are moved to raised beds within a greenhouse with frequent turning for even and more quick further drying
