That’s a measure of sugar in the fruit, in other words, these cherries are seriously sweet.\u003c\/p\u003e\n\u003cp\u003eNext comes 96 hours of fermentation, followed by Thermal Shock and Quenching. (Thermal Shock uses a sudden temperature change during processing, while Quenching involves rapid cooling. These techniques help guide how the coffee develops.)
