Another banger! This coffee wraps you in the warmth of a golden sunrise, with earthy oregano, hints of lemon thyme and sweet bergamot. A touch of bergamot adds floral elegance, while thyme lingers like a herb-scented breeze. 

The processing
Once the cherries are hand-picked, only the ripest are selected. They are left to rest and oxidize at room temperature for 16 hours. Then, the cherries undergo a special anaerobic process in sealed tanks for 38 hours, staying at a cool temperature. After that, the cherries are placed in pulping tanks, where they oxidize for another 6 hours, and the cherry juice is collected for future use.

Next, the cherries are pulped, and the beans are separated from the remaining pulp. The beans and mucilage undergo a 6-hour oxidation process before being submerged in water mixed with the earlier-harvested juice. This ferments the beans for 24 hours at a warm temperature.

Once fermentation is done, the beans are washed in hot water followed by cold water. Finally, the beans are laid out to dry under controlled conditions for 18-24 days until they reach the perfect humidity level.
