This wet-hulled lot underwent a double anaerobic fermentation: first in cherry, then in parchment. The cup still carries the rich, earthy depth you want from a great Indo, but layered over it is something far more lively, bright citrus sweetness and a finish that really sparkle.

When Ibna & Hapid, back in 2022 realised that there weren't any new-generation coffee producers around their hometown, wild ideas became reality and the ‘Gayo Origin Project’ was born. A journey full of experiments, mistakes, learning, and eventually finding their groove led to a totally fresh approach of Indonesian specialty coffee.

What is wet-hulled coffee? Mostly found in Indonesia, this processing method suits the humid climate and results in coffee with an intense body, relatively low acidity, and earthy, spicy flavours. Beans are hulled while still moist, unlike in other methods where beans are fully dried before hulling. What differentiates their coffees is that they process with their own twist focussing on cleaner, more vibrant flavors rather than a traditional indo cup profile.

Keep your coffee fresh

Store your coffee airtight in a clip-sealed bag or metal tin to protect it from air and light. Let your coffee rest for 2 weeks after roasting to degas. Then it reaches its brewing flavor peak up till 8 weeks. If you won’t use it within two months, you can portion and freeze your coffee to maintain freshness.
