That’s exactly what we love about this lot: it brings together the vibrant, expressive character of anaerobic fermentation with the juicy and fruity flavor that make Ugandan coffees so exciting.

Nice to know: washing station manager Ibrahim Kiganda placed second at the Africa Barista Championship 2025.

Together with his team and the farmers of the Buginyanya and Mayiyi groups, only the ripest cherries are selected, with a minimum Brix reading of 17%, creating the best possible starting point for processing. The coffee is then fermented anaerobically for 120 hours in sealed barrels with a PK1 yeast culture, bringing extra complexity and a playful character to the cup while keeping it clean and balanced.

The yeast was specially developed by a company focused on coffee fermentation research, combining science with a strong respect for origin and helping push Ugandan coffee processing forward. After fermentation, the coffee is dried on raised beds in the sun for 3–5 days, then slowly shade-dried until it reaches 10.5% moisture. Finally, it rests in a temperature-controlled warehouse to let the flavours settle and develop.

Keep your coffee fresh

Store your coffee airtight in a clip-sealed bag or metal tin to protect it from air and light. Let your coffee rest for 2 weeks after roasting to degas. Then it reaches its brewing flavor peak up till 8 weeks. If you won’t use it within two months, you can portion and freeze your coffee to maintain freshness.
