The specialty fanatics among us who've been around for a while know: we were really into that fruity cup profile with blueberries and citric notes. As the industry evolved into what makes it so lovable today, so did experimental processing methods: from Natural, to Anaerobic, to Thermal Shock, co-fermentation and what not!? The fact that farmers from small villages such as Bruselas are coming up with innovative processing methods you’d think only lab technicians could pull off, shows us what makes coffee like this special.

This bourbon undergoes its first fermentation of 96 hours as whole cherries, followed by a depulped 48-hour fermentation in its sweet mucilage and is co-fermented with wild blackberries before being sundried for 15 days, crafted with total finesse and craftsmanship.

Marlon Rojas Pérez, a third-generation coffee producer and current Colombian Cup Tasters Champion, is grateful that the COVID pandemic brought him back into the coffee world, where coffee has since become a passion, a dream, and a life project. “I have had the chance to learn and explore so much about this fascinating industry.”
