After last year’s success of the first decaf in our Liquid Diamond range, we knew we couldn’t settle for less, so we searched day and night for a partner to make it happen again. This coffee has been so loved that tracking it down felt more like a treasure hunt than a sourcing job.

Wilton’s coffees are so distinct you could spot them blindfolded. His signature shines through even after sugarcane decaffeination, leaving a cup that’s anything but “just decaf.” So go ahead, have that extra cup before bed, but be careful not to brew it all within the first days you get this doosje.

Granja Paraiso 92 is the boutique farm of Wilton Benítez in the valley of Cauca. Famous for its science-driven processing, from anaerobic fermentations and thermal shock to sugarcane decaf. Despite its small size, the farm produces coffees so precise and vibrant that they routinely find their way onto competition stages around the world.

Sugarcane decaffeination starts its life like any other coffee out there. Carefully grown, harvested and processed. The magic happens when naturally derived ethyl acetate (a by-product of fermenting sugarcane) is used to gently remove caffeine. Unlike harsher chemical methods, this process preserves sweetness and complexity and is better for both people and the planet.
