We secured a new lot of Ombligón from the team at Finca El Diviso, who quickly rose to fame for crafting world-class coffees. Ombligón is a rare variety that seems to be 'everywhere' in conversation but is actually native to and almost exclusively cultivated in Huila, Colombia. Through an innovative multi-stage process using yeast, thermal shock, and anaerobic fermentation, with the finesse of Nestor and Adrian, this results in a complex and experimental brew with the sweet intensity of cherry candy. If you haven’t tried Ombligón yet, get ready for this coffee to blow your mind.
